氧化应激反应氧化过程不仅会出现在油的生产过程中,我们的身体也会出现氧化过程。应激反应不断出现在人体内,从而导致自由基的形成。通常,抗氧化剂能保持一个平衡点,由于它的保护,自由基不会造成严重的身体损伤。但是,一旦这个平衡被打破,就会出现“氧化应激反应”,从而导致正常细胞功能的退化,甚至是细胞死亡。氧化是细胞老化过程中的基本的,复杂的现象。油脂的过氧化反应往往与化合物中的双键数量有比例对应关系,这就解释了为什么油酸对氧化几乎没有什么反应。细胞膜含有大量的脂肪和胆固醇,膳食决定了它们的组成结构。当膳食中含有大量橄榄油时,细胞的抗氧化性能就更强,退化的细胞就更少,细胞的老化更缓慢。橄榄油中大约1.5%是非皂化物部分,其中就含有抗氧化剂。原生橄榄油中的这些抗氧化物质和微量元素的含量最高。
